This is from a Croatian island that I write you today. I put aside the clear sea and the burning sun to take care of your taste buds (such generosity suprises me myself) (I lose at least 1 hour tanning). This is not because I’m going on vacation that I forget my love for cakes ! As holiday means “rest” you will easily understand that I spend most of my time eating pastries rather than preparing them. I tasted an mazing Croatian cake, and I had to share the recipe with you.
My aunt is an excellent cooker. The cake she made today is a little marvel. It has everything you expect from a holiday cake: taste, simplicity, and rapidity. I agree that the aesthetics of this sweetness is far from a work of a great baker, but at least you do not spend 3 hours to take a picture of it, post it on instagram, before swallowing it!
What is good with this cake is that you can easily change the recipe. If you do not have carob powder, take hazelnut powder or almond powder, what you want (but avoid drugs, it is wrong).
My aunt croatian cake
1 cup granulated sugar
2 cups of flour
2 cups of carob powder (you can find at health food store or on internet)
[if not hazelnut powder, almond powder, mixture, what you want)
3 cups grated apples
1/2 cup vegetable oil
1 cup milk
1 tsp vanilla powder
8g baking powder
Optional: black chocolate
- Whisk the eggs with the sugar until it become white and take volume.
- Add one by one:
_ Carob powder
_ Grated apples
- When the ingredients are well mixed and the dough is smooth, add the flour sifted with baking powder.
- Bake at 180 ° C for about 30 minutes (sometimes less). Check the cooking of the cake with a knife.Then : coat the cake with apricot jam or any fruit jam you like. You are free in this choice.Optional: If you wish, you can melt the dark chocolate and cover the cake. My aunt does it. Personally, I think it hides the true taste of the cake.
